With rationing in full force and healthy fruits often a distant dream, a wartime foody focus was making the most of what one had. Just as citizens were counselled to eat potatoes that were plentiful rather than tucking into bread (which relied on imported wheat), so too the government sought to provide helpful hints on making more palatable that which had long been regarded as semi-inedible, while simultaneously maximising nutritional value. This public health poster presents a colourful advertisement for the most quintessentially English of schoolboy horrors, nutrient-rich greens.
